Wild and weedy pesto

On the subject of food as medicine:

I am a huge fan of easy ways to incorporate herbs into your daily life. Effective herbal medicine is most often the type that you’re consistent with, which makes having tasty herbal recipes a must. While herbal teas and infusions are maybe the easiest and most well known way to get in your daily dose, one of my favorite ways to get medicinal/functional amounts of healing herbs into food is pesto!

It’s not just about basil anymore. You can use any green herbs that you have available. I love to use moringa, nettles, arugula, parsley, tropical chickweed, spanish needle and if I’ve got it, some kind of basil too. Many of these greens are considered weeds and grow freely in yards and gardens. They offer a ton of vitamins and minerals as well as being highly medicinal and often….FREE.

Wild and Weedy Pesto Recipe

2 cups greens/herbs of choice

3Tbs hemp seeds or sunflower seeds

3 peeled garlic cloves

2Tbs lemon juice

2-3Tbs extra virgin olive oil

3-6Tbs water

Salt to taste

Optional: 3-4Tbs nutritional yeast

*add all ingredients to the blender except the EVOO , water and salt. Blend until pasty. Add olive oil a little at a time while blending continuously. Add water gradually until you’ve reached your desired consistency. Salt to taste.

Enjoy on pasta, in wraps, as a dip for veggies and crackers or to liven up any soup!
